Choose Inlaw or Outlaw when creating a human character. They use the same basic equipment but have different spawn points and jobs. Alignment Swapper switches between them for 500 Moola and resets EXP and Tier.
Vampire is obtained later through Moe Wolff. Vampires use blood and The Core to progress, cannot use guns, and lose access to most human NPCs.
